Triple Protein Power Wrap


Feeling peckish, friend? Try this triple protein wrap and you will perk right up! It couldn't be easier. Just get the following stuff together and wrap it up into a little burrito of awesomeness.

Large tortilla, warmed on the stovetop
Your favorite hummus
Several medium tomato slices
A handful of lettuce
A handful of sunflower seeds
A handful of your favorite nuts (I used pecans)
Your favorite salt, pepper, herbs and spices*


*I used the Everyday Seasoning from Trader Joe's. It's so yummy! (And cheap.) If you don't have a Trader Joe's in your neighborhood, you can put together something similar on your own. The Everyday Seasoning contains sea salt, mustard seeds, black peppercorns, coriander, onion, garlic, paprika and chili pepper.

Sweep the hummus on your tortilla, then top the whole thing like a pizza. It should look something like this. 


Then carefully, and as tightly as you can, roll it up into a lovely wrap. Cut in half and enjoy! Taste great with a kombucha or an iced tea!

Banana-Pecan Muffins


I hope everyone had a fabulous Halloween! We tried the "Switch Witch" thing for the first time this year. My daughter was able to go out and trick-or-treat like everyone else, but at the end of the night she left her candy out for Switch Witch, who swooped in while she was sleeping, took her garbage candy ("to feed to her naughty cat") and left, in it's place, good quality candy that I don't have to worry about her eating. No dyes, no preservatives, etc. It worked like a charm and my kiddo didn't have to feel left out of the Halloween festivities! The junk candy went to work with my husband who left it out in the breakroom for his co-workers. 

The morning after Halloween I made these fantastic muffins because I wanted to use the tons of pecans falling from the tree in my front yard right now! I seriously have three buckets full of pecans and at least three or four dozen more pecans fall from the tree every day. I love pecans, so I'm in heaven! I can't wait to make pies. If you don't have pecans, or they are too expensive, any nut will do. Or you can replace the nuts in the streusel topping with oatmeal, which is super cheap. Feel free to be creative!

Also, my daughter (who is a really picky eater) absolutely LOVED these! She ate two for breakfast, then came home after school and ate four more. If you have kids, you might want to make a double batch.

1 1/2 cups non-dairy milk (I used unsweetened almond)
2 teaspoons apple cider vinegar
2 2/3 cups flour (I used white whole-wheat)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons cinnamon
1/3 cup vegan butter, softened
3/4 cup granulated sugar (organic preferred)
1/4 cup vegan yogurt (I used unsweetened coconut yogurt)
1 teaspoon vanilla extract
2 large overripe bananas, mashed
1 cup pecan pieces
1/2 cup brown sugar (organic preferred)
  • Preheat oven to 325 degrees. Grease a 12-muffin tin or place paper liners in it.
  • In a small bowl, whisk the milk and vinegar together and set aside to allow it to curdle.
  • Beat butter and sugar together until light and fluffy, about two minutes or so. 
  • Add yogurt, milk and vinegar mixture, and vanilla. Mix well. 
  • Add bananas and mix again.
  • On top of your soft mix, dump the dry ingredients. Flour, baking powder, baking soda, salt and cinnamon. Then stir with a spoon or beat gently until well-incorporated, but take care not to overmix or your muffins will be tough.
  • Spoon the batter into your muffin tin, filling each cup almost to the top. I did two scoops into each cup with a large cookie scoop, and that worked perfectly. 
  • In a separate bowl, mix your nuts or oats with the brown sugar and spoon it onto the tops of your muffins. 
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Enjoy!

Homemade Vegan "Parmesan"


I've had this cookbook, Vegan Food Gifts, on my Amazon Wish List ever since I got wind of it, and I tried unsuccessfully to win it from two or three different blogs during MoFo. When I finally figured out I wasn't going to win it, I just sucked it up and bought the damn thing. Because (spoiler alert to my friends, family, and neighbors) this year I'm planning to give "food gifts" as presents. My first course of action is to start making and sampling the recipes so I can figure out what's good to give.

So far, I've made the Fudgy Brownie Mix (photo at the bottom of this post) and the Italian-Spiced Parm-y Sprinkles. There are about 50 remaining recipes I'm dying to try. They all look soooooo good! And since nobody else I know is vegan, besides my husband, and my health guru, Katherine, I have to choose wisely when considering what to give as gifts. So far, I've only tried the two recipes, but they were both fantastic. And I wanted to share the "parmesan" recipe with you because, not only does it taste amazing, but it's easy to make, not too pricey, looks and smells gorgeous, makes a fabulous topper for garlic bread, spaghetti, popcorn, and salads. And I think even non-vegans can appreciate the yummy flavors it presents. Plus, it's got walnuts in it! Hello, protein! My daughter hates the taste and texture of nuts, but she loves this stuff. So, now I can sprinkle the health benefits of nuts onto her salads and she's none the wiser.

1/2 cup walnut pieces
1/2 cup nutritional yeast
1/2 panko-style bread crumbs
1/2 teaspoon dried basil
1/4 teaspoon fennel seed (*I subbed cumin)
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram
1/4 to 1/2 teaspoon salt, to taste
  • Add all the ingredients to a blender or food processor and pulse until the walnut pieces have been ground into a powder. 
  • Yield: About 1 1/2 cups.
And, since I want to make you really, really crave chocolate right now, here's a picture of the brownie mix prepared...


The mix would be so cute in a jar, and all your recipient has to add is milk, oil, and applesauce. I will definitely be handing this one out for Christmas!

Purple Monster Muffins


These muffins are easy to make and the batter is bright purple! Kids love it. And, best of all, they are full of yummy nutrients thanks to a healthy helping of fruit, nuts and agave nectar.

1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 10-ounce bag frozen mixed berries
1/4 cup finely chopped walnuts
1 medium banana, peeled and mashed
1/2 cup vegan butter, melted and cooled to room temp.
1/3 cup soy or nut milk
1/4 cup raw agave nectar or maple syrup
sliced almonds, for topping
sucanat, for topping
  • Preheat oven to 350 degrees.
  • Sift flour, baking powder and baking soda together into a large mixing bowl.
  • Add remaining ingredients and carefully stir with a wooden spoon until well mixed.
  • Spray a 12-cup muffin tin with baking spray, or line with muffin cups.
  • Fill all cups with equal amounts of batter. I use a large cookie scoop to measure it out.
  • Top each muffin with a tablespoon of sliced almonds, followed by a sprinkle of sucanat, to taste.
  • Bake for 20 minutes. 
  • Allow to cool completely before removing from muffin pan.
  • Enjoy!
