Oatmeal-Chocolate Chip Pancakes


These pancakes are rich, chocolatey, delicious, and jammed full of fiber. Top with a pat of vegan butter and some pure maple syrup. How can you go wrong?
 
1 1/2 cups old-fashioned rolled oats
1 1/2 cups unbleached white whole wheat flour
1/2 cup flax meal
1 tablespoon + 1 teaspoon baking powder
1 tablespoon stevia (or preferred sweetener)
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
3 cups soy milk
1 cup vegan semi-sweet chocolate chips
  • Mix all dry ingredients together in a large bowl. 
  • Make a well in the dry ingredients and add the vanilla and one cup of soy milk. Stir gently with a wooden spoon until just mixed. Add the remaining soy milk, one cup at a time, stirring after each addition. 
  • Fold in the chocolate chips. 
  • Drop onto a pre-heated/pre-greased griddle and cook until bubbles start to form, just one or two minutes. Watch closely! Then flip and cook on the other side for another minute or so. 
  • Enjoy!
BULGING BELLY WARNING: 
This recipe makes a lot! I use this recipe to feed a family of three, and we usually have enough leftovers for at least one of us. So, if you're only cooking for one, or don't want any leftovers, you might want to cut the recipe in half. If you don't mind leftovers, your extra pancakes will keep well in the fridge (in an airtight container, o' course) and can be quickly reheated in a warmed skillet or toaster oven.

Chocolate No-Milk Shake


Oh. My. God! This tastes just like a chocolate milkshake made with ice cream. You could easily fool any die-hard dairy lover. It's sooooo good! And, best yet, it's pretty healthy too.
The recipe calls for a cup of raw cashews, and raw cashews don't come cheap, but I got lucky and found them for 2 bucks a pound at my local salvage grocery store! Big-time score!!!
Here's the recipe...
(you are going to love me so much for this)

1 C raw, unsalted cashews
1 tray of ice cubes (about 3 cups)
1/8 cup powdered unsweetened cocoa
1 C soy or nut milk
1/4 C agave nectar, maple syrup, sugar, or stevia
1 tsp pure vanilla extract
1/4 tsp salt
  • Toss all ingredients, except the ice, into a strong blender and blend until smooth. 
  • Add ice cubes through the hole in the lid one at a time, and continue to blend until nice and creamy.
  • Try substituting maple or mint flavoring for the vanilla sometime. Both are equally yummy!
  • Enjoy!

Kalappange Smoothie


What is "kalappange," you ask?
Why, it's kale-apple-orange all mingled together. Oh yes! And it's fabulous.
I got the original recipe from The Cancer Project cookbook (it's the "Green Goddess"), but I changed it up just a hair by adding an apple and a teeny bit of stevia. I also like to stick in a few tablespoons of vanilla-flavored soy protein powder when I have it on hand.
Here's the recipe:

1 banana
1 bunch green grapes (red grapes have more sugar, so I avoid)
1 apple, or 1 pear (I used a Pink Lady apple in the picture)
2 stalks of kale, leaves only
1 orange, peeled of course
1/2 C soy milk

Optional:
3 T vanilla soy protein powder
1-2 teaspoons stevia, to taste

Preparation couldn't be easier. Just toss everything into a blender and mix on High for about a minute. It may look done before then, but it takes a lot of muscle to break up those kale leaves. So, be sure to wait the full minute.

Unless your fruit was refrigerated beforehand, your drink will be at room temperature. So, you can blend in some ice cubes if you like. Or just pour over some cubes. Or do what I do and serve in a chilled pub glass. Or just be hardcore and drink it straight. It's delicious no matter what.

My daughter goes crazy for it. Here's a picture of her knockin' back the batch I made this morning. Her cheeks are all puckered because she's trying so hard to suck the fruity bits through the sippy cup holes. I tried to teach her to drink it through a straw, but whaddaya gonna do....
